A Great Soup Recipe


  • 1 small onion                                                                     TB. fresh minced garlic
  • 4 oz. turkey ham, turkey sausage or other meat        5 carrots, sliced
  • 1 container organic vegetable or chicken broth          4 stalks celery, sliced
  • 1 box quinoa (6 servings)                                                 6 medium red skinned potatoes
  •  large bunch of kale

In large pot, saute onion in a bit of the broth.  Add meat and cook for a couple minutes. Add in all of the vegetables, cover and simmer for ten minutes, stirring often.  Add the rest of the broth and the quinoa.  Bring to a boil.  Turn to lower and simmer until veggies are tender and quinoa is cooked.  Salt and pepper to taste.
